Ingredients

Quince 1 kg
Sugar 1 kg

Cooking method

  • Wash the quince fruits, cut the peel thinly, remove the core with seeds, and cut the pulp into thin slices. Put some sugar on the bottom of sterilized dry jars, then put a layer of quince slices and cover them with sugar. Alternating quince and sugar, fill the jars tightly.
  • Add sugar in the last layer, close the jars with plastic lids and refrigerate.

  • Now I'll tell you how I do it. I scald the thoroughly washed quince with boiling water. What for? I just once read that for raw jam, fruits such as apples, pears and quince should be scalded with boiling water before further processing, since then I have been following this advice, simply because "it is written in a smart book." I don’t peel off the skin (yeah, right now, there are vitamins under it), I love it, but naturally with the fruits. I cut the quince into slices of about 1.5 cm. I fall asleep with sugar and leave for 3 days at room temperature. Once a day, carefully so as not to damage the slices, I mix. After 3 days, when there is no trace of sugar grains left, I transfer the quince to a dry sterilized jar, seal it and put it in the refrigerator for storage.
  • A slice or two of quince, put in a cup before brewing tea and ... "let the whole world wait ..." in our, in Brazilian "bite" with aromatic hot tea ... Well, I love quince ... I love it and that's it ...
  • P.S.I almost forgot to say about sugar ... I never put a whole kilogram, the maximum that I "allowed myself" is 800 grams. for 1 kg. quince, I do not know about others, but personally, with this proportion, the quince feels great ...

Then what's the point in sterile jars.
