Ingredients

Sugar 150 g
Carrot puree 150 g
Cottage cheese (fat content does not matter) 150 g
Vegetable oil 150 ml
Eggs 2 pieces
Raisins 100 g
Dry cranberry or red barberry 2 table. spoons
Apricot jam 2 table. spoons
Water (liquor) 1 table. the spoon
Powdered sugar
ginger, cinnamon, nutmeg, dry mint 0.5 teaspoon each spoons
Vanilla flavor 1 g

Cooking method

  • Steam the carrots and puree with a blender. Cool down.
  • In a bowl, combine flour, baking powder, spices and oatmeal. Add the rest of the ingredients and knead the dough. The dough turns out to be viscous, thick. Stir in raisins and cranberries.
  • Put the dough in the prepared form and bake in an oven preheated to T 180 ° (convection 160 ° without preheating) for about an hour.
  • Leave the finished cake for 15 minutes in the form, and then shake out on the wire rack.
  • Heat the jam with liqueur and grease the finished cake. Sprinkle with icing sugar before serving.
  • The cupcake turned out to be dense, juicy and sooooo aromatic.
