Coconut cupcake with lemon icing

Ingredients

Cake:
Wheat flour 7/8 cup (210 ml)
and 2 tbsp. l.
Milk 30 ml (2 tbsp. L.)
Salt 1/2 tsp
Sugar 1/2 cup (120 ml)
Softened butter 5 tbsp. l. (70 g)
Egg 2 pcs.
Starch 2 tbsp. l.
Baking powder 1 tsp
Lemon zest 1 ½ tsp
Grated coconut 6/8 cups (180 ml)
Glaze:
Powdered sugar 1/2 cup (120 ml)
Grated lemon zest 1 tsp
Lemon juice 2 tsp

Cooking method

  • Cup = 240 ml; 1 tbsp. l. = 15 ml; 1 tsp = 5 ml.
  • Grease the bottom of the bucket with vegetable or butter. In a bowl, combine flour, starch, salt and baking powder.
  • Beat butter with sugar and yolks with a mixer until white. Add flour, milk and continue whisking. Add lemon zest and shredded coconut (I used shredded fresh coconut pulp) and mix well. Add whites, whipped into a strong foam, and gently mix the dough. Put the dough into the mold.
  • For the glaze, mix all ingredients until smooth. Put the icing on a warm cake and let it set.

Time for preparing:

Bake in a bread maker for 60 minutes

Cooking program:

("Baking" mode, medium crust).

Yesterday I did Coconut cake with lemon icing... I used the recipe from the instructions for the LG stove, and on top was the usual lemon icing. I liked it very much, only salt will have to be thrown less. Slightly revised recipe.

Instead of coconut, I used a mixture of dried fruits, it turned out even very nothing, thanks for the recipe, only the inside turned out to be a little darkish, maybe it did not fit with the baking mode, since I have a Clathronic, but there is no program for baking muffins

1. What is the consistency of the dough?
2. Is it possible to bake in a simple oven using this recipe.
3. I have HP with two blades, "brick" bread shape. Will the cupcake be thin?

The dough turns out to be liquid ........ And why not bake it in the oven ... I think it will ...
I think it might get a little thin ... better try the oven with a smaller shape ...

As with all cupcakes, it seems to me that it is quite possible to bake in the oven, just do not forget about the special form. And we cut the salt. In general, lately I have limited myself to a pinch of non-yeast recipes.

UR7IOW, You have already been written about the consistency of the dough. If you try to bake in an ordinary oven, preheat it, the temperature is 175 C. The oven is 45-60 minutes. In minutes, trust the readiness with a splinter. Good luck!
