Squash pancakes with mushrooms

Ingredients

2 pretty large young zucchini
250 ml of kefir
1 egg
salt, pepper to taste
1 onion
flour + 1 tsp. baking powder
for brazing:
500 gr fresh champignons
1 large onion
salt, pepper to taste
Vegetable oil for frying

Cooking method

  • Cut mushrooms and onions into cubes, fry in the minimum possible amount of vegetable oil until golden brown.
  • Peel the zucchini, grate on a fine grater, squeeze the juice. Grate the onion on a fine grater, mix with the zucchini. Add the egg, kefir, salt, pepper, flour and baking powder. I added 1/3 corn flour, 2/3 wheat flour. The dough is thick, it falls off the spoon, and does not flow. Add mushrooms and onions last. Fry as usual in vegetable oil.
  • I ended up with about 20 large pancakes.
