Festive bread

Ingredients

Flour: only 400 g
peeled rye 70 g
seeded rye 50 g
wheat 280 g
Tea leaves + water 160 ml
Salt 9 g
Peanut butter 5 g
Coffee grounds 1 tsp

Cooking method

  • Knead all the flour, water and sourdough.

  • About 1 hour on the rise, then add salt, oil and coffee grounds.

  • Knead a second time.

  • Form the bread, allow time to proof and bake the bread.

Note

Such bread, of course, can be made from any bread (or other yeast) dough. I had such a recipe.

Here's another bread for a different recipe. "Festive" custard on
kvass.

I did this:

-10 gr. dry kvass

-50 gr rye flour

-150 ml boiling water

Mix kvass and flour, brew
boiling water. Let cool slightly.

-570 gr wheat flour

-450 gr liquid rye
leaven

-100 ml of tea leaves

Add brewed kvass with
rye flour and knead the dough. Leave the dough to rest for 1 hour.

Then add

-13 gr. salt

-5 gr. peanut butter

Knead a second time. Then
form bread. There is nothing complicated in molding. and leave for proofing until it increases in volume by
two. Bake bread in one of the ways with steam.

Steam in the oven is very important for the successful result of bread and rolls, steam helps the bread rise and gives it a crispy crust.

Steam can be created in the following ways:
1) before turning on the oven to warm up, put a bowl of hot water on the bottom of the oven, this is the easiest way, but it gives little steam.
2). when the oven has warmed up, put buns or bread in it, close the door for just a couple of seconds, open the oven again and spray on the oven walls with a spray gun and quickly close the door again, after 3 minutes repeat this procedure again.
