Malt - this is a "noble" ingredient for bread! And it is advisable to pre-steam it with boiling water, then keep it warm until it cools down to 35 * C and only then add it to the dough.

The result is always excellent, the bun turns out to be good, straight classic, I don’t know where else the extra 75 g would go. I can juggle with different wheat. flour, but the total is always 250. In post baking on water (always usually on whey). Always EXCELLENT, the bread turns out the same as above in my photos (answer 436), it never falls off or cracks, the water is normal, the roof is beautiful.

My variation on this recipe from Fugasca:

The second time I bake it and I will also clarify the exact proportion for myself, but I really liked its taste.
My version of the recipe is as simple and inexpensive as possible.
Products composition:

rye flour - 150 grams
wheat flour - 250 grams + 1 tbsp. l. (but probably today I will add another 1 tbsp. l.)
rye malt - 2 tbsp l.
water - 300 ml.
olive oil - 2 tbsp. l.
salt - 1.5 tsp
sugar - 1 tbsp. l.
yeast 1 tsp

The malt was steamed (straight in a bucket) with 300 ml of boiling water, after cooling, oil and dry ingredients were added. During the kneading, I added 1 tbsp. l. flour. But during the second kneading, I noticed that the bun began to stick to the wall and below, near the shoulder blade, the dough was more liquid than the entire bun.
The roof of baked bread has opal (the top is uncritical, it just wrinkled), but inside it is well-mixed, porous, does not crumble at all, very tasty with a beautiful dark color.
I do not have enough additives in it - raisins or seeds. I will continue to experiment with him.

Bravo to you! The recipe is so verified that I didn't have to add or subtract anything ... What I didn't like was the seasonings in the dough. It turns out that neither I nor my husband are lovers of coriander and caraway. But we didn't know it ourselves ;-) But that's okay! It's a matter of taste!
