Ingredients

boiled and peeled chickpeas 300gr
sesame 100gr
olive / sunflower / sesame oil 3 tbsp
lemon juice 5 tbsp
chickpea broth 150 ml
salt
zira, saffron, red hot paprika ground
sweet red paprika, ground black pepper
garlic 2 cloves

Cooking method

This was my first hummus preparation, and I read a bunch of different recipes. I decided to optimize this process for such devices as Thermomix and their analogues.
First you need to boil chickpeas or buy a ready-made one.
Soak the chickpeas overnight, then cook for 1.5-2 hours over low heat.
Or boil under pressure for 10 minutes and drain the first water and simmer for 4 hours. It turns out very tender and tasty.
You need to cook without salt!

Now we need to cook Tahini paste(tahina, tahini, tahina)
put sesame seeds 100 g in a bowl. We turn on 120g / 1-1.5 sc / 10 minutes and fry.
Then let the sesame seeds cool.
Grind the cooled sesame seeds into powder, sc 6/10 seconds (approximately, we monitor the consistency)
add three tablespoons of oil (1 tablespoon olive and 2 tablespoons sunflower) and beat for 6 sc, seconds 5.

Zira must be ground into dust; this can be done in a mortar or in a spice grinder. Put all the spices according to your taste,
Next, put boiled and peeled Chickpeas, garlic 2 cloves, salt, cumin, saffron, black pepper, red sweet paprika, lemon juice 5 tbsp
Grind for 6 5 seconds. We open the lid and collect from the walls, add the broth from Chickpea, about 150 ml came out from me .. And smoothly turn it on again starting from the first speed so that everything mixes, bringing it to 4 speeds and switch to Turlo. I, Turbo turned on three times for 2 seconds.

A little warning:
If the paste is thick, then make sure that your device does not overheat !! Reduce the time if you are not sure that your machine can work under load without any problems!

How to clean Chickpea from film:
The film on the peas is rough and it has a ponytail, so take it and pull on this small tails the film itself is removed))

And also, I was told that you can wipe it through a sieve and the whole film remains on the sieve.

All the films float up, you drain them, fill them with cold again and rub the rest. I check it like this - I catch 1 piece from the water and squeeze it with my fingers, if it jumps out of the shell, then you can put it under running water and clean it, and then cook it without a shell. 5-10 minutes and it's ready
