Dessert Strawberry Bisque

Ingredients

Strawberry 200 g
Orange fresh 180 ml
Yogurt 10% 200 g
Vanilla 1 g
Sugar 2 tbsp. l.
Liqueur Grand Marnier 2 tbsp. l.
Strawberry syrup 20 ml
Agar-agar (not complete) 1 tsp
Ice-cold vegetable oil (or the same amount of ice-cold vodka) 150 ml
For serving:
Whipped cream with powdered sugar
Mint
Candied orange peel in chocolate
Biscuit

Cooking method

Dessert Strawberry Bisque
"Caviar": It can be prepared a week before the holiday. The portion is large, you can cook half. The caviar is stored in a closed glass container in the refrigerator for 3-4 weeks. Mix fresh with strawberry syrup, add agar-agar, let stand for 5 minutes and stir well. Place in a saucepan, bring to a boil and cook for 1 minute. Remove from heat.

Using a pipette, add oil (vodka) to a well-cooled freezer. This must be done very quickly, as the mixture quickly solidifies, but it can be melted (in small portions) in the microwave.

Throw the finished "caviar" onto a strainer and let the oil (vodka) drain well.

Punch the strawberries with sugar in a blender and rub through a sieve to remove the seeds.

Add vanilla, yogurt and liqueur to the strawberry puree, mix well. If you do not have this liqueur, replace it with cognac.

Place the finished dessert in the refrigerator for at least 1 hour.

Serve with cream, caviar, a sprig of mint, candied fruit in chocolate and biscuit croutons.
