In general, here are the details of the recipe, as I did:
Kalach in Natasha style
Dough:
* Potato-hop starter - 75 g.
* Water - 75 ml.
* Wheat flour - 150 g.
Dough:
* Dough - all
* Milk - 250 ml.
* Sugar - 2 tbsp. l.
* Salt - 1 tsp.
* Melted butter - 1 tbsp. l. with a slide
* Vegetable oil - 2 tbsp. l.
* Wheat flour - 550 g.
* Yolk - from 1 egg + water 1 tsp.

Mix the ingredients for the dough and put in heat for fermentation (when the mass begins to settle, the dough is ready)
Put the dough into the kneading bowl.
Pour in warm milk.
Pour in salt and sugar.
Pour in vegetable oil and ghee, dissolved in the microwave (make sure it is not hot!) Mix everything well.
Pour in half the flour. Start kneading with a spoon.
When the mass becomes more or less homogeneous, add the flour in parts and proceed to manual kneading.
The kneaded dough is elastic and readily lags behind hands and dishes.
Cover the bowl and put it in the warmth to rise. After an hour, you can knead.
When the bun comes up twice, we start forming the product.
We put the workpiece (or workpieces) on a baking sheet covered with baking paper and send it for proofing.
When ready (also doubled), grease the top with egg yolk mixed with a teaspoon of water.
It is baked at T = 180 * C for 35 minutes.
