Eggplant Badimkan kyukyu

Ingredients

eggplant (peeled) 400 g
bulb onions 200 g
eggs 4 things
flour 1.5 tbsp. l.
bread crumbs ~ 30 g
baking powder 0.7-1 tsp
garlic 3 cloves
barberry berries (dried) 1 tbsp. l
saffron pinch
parsley
salt pepper

Cooking method

  • Pour boiling water over barberry berries for half an hour.
  • Peel and cut the eggplants into cubes or cubes.
  • Cut the onion into strips or whatever you like.
  • Pour oil into a saucepan and fry the onion until soft, then add the eggplant and cook, stirring occasionally, for about 10 minutes.
  • Add finely chopped garlic, salt, pepper, mix.
  • Remove from heat and let cool vegetables to room temperature.
  • In a separate bowl, combine eggs with flour, bread crumbs and baking powder.
  • Add cooled vegetables, finely chopped parsley (or cilantro), barberry berries (drain the water) and saffron to the egg mixture. Mix.
  • Put the mixture in a mold, smooth and bake in an oven preheated to 180 C for 35-40 minutes until tender.
