Cooking method

  • At first I didn't take photos (I didn't think to exhibit the recipe), but without them everything will be clear.
  • Cooking the dough.
  • 1. Separate the whites from the yolks.
  • 2. Grind the bran into flour. Initially, take small bran (like dust, not balls!), Because the balls are badly chalky, large particles are obtained and then they come across in the product and are not baked.
  • 3. Mix all ingredients (except proteins), punch with an immersion blender until smooth.
  • 4. Beat the whites to the peaks and in several steps, mix into the resulting dough.
  • You do not need to beat the whites separately, but immediately mix all the ingredients with a blender. I cooked this way and that. But with the separate preparation of the eggs, I liked the result more: the trays came out fluffier, lighter, more porous, baked better.
  • In the recipe in strict Yogurt, another 20 grams of yogurt is indicated in parentheses. The dough seemed steep to me, so I added a little more to make it tighter. And you see for yourself: is it necessary or not. My yogurt was very thick, almost like cottage cheese, so the liquid was not enough, apparently. If you are going to be drinking, then you may well not need this supplement.
  • The dough must NOT be liquid! But it should be squeezed out of the pastry bag (or bag). Can be laid out and just with a spoon.
  • Put the dough in capsules no more than 2/3 -3/4 of the volume. It rises strongly. Otherwise ... they will "run away."
  • 5. Bake in a preheated oven until 180 g for 25-30 minutes. Be guided by your oven. We check the readiness with a toothpick. Do not overdry !!!
  • 6. Take out and cool.
  • 7. Prepare the filling.
  • This time I had a smoked turkey breast, to which I added carrots and onions (fried in a dry pan and (adding a little water) brought it to readiness), mozzarella cheese (gr 30 in total), dried garlic and herbs, salt, spices. I pierced everything with an immersion blender and brought it to the structure of a pate. I put it in a pastry bag.
  • 8. Prepare the cream for the caps.
  • Grate the cucumber and give the liquid well, almost dry!
  • Finely chop the greens.
  • Mix all ingredients and beat with a blender until creamy. But don't be too zealous! The longer you beat the cottage cheese, the thinner it becomes! And we need the cream to keep its shape!

  • We transfer the cream to a pastry bag with a nozzle. I have an Open Star.

  • I made “roses” from cherry tomatoes, “leaves and greens” from fresh cucumber, added yellow pepper and fluffy dill. You can use whatever you like.

I can say more: removing salt from the ingredients of the dough and adding sahzam there, you get an excellent dough for sweet cupcakes.
Any berries, jam, preserves, preserves are suitable for the filling (it is better if all this is without sugar, on stevia or other sahzam).
Use cottage cheese, ricotta, sakhzam in the cream, you can add food coloring.
