Mayonnaise from Raisin

Well, I can also write down my proportions, where I stopped and filled my hand (I do it in a lazy way):
I throw in a mug 2 tsp. ready-made mustard of two varieties (Bavarian and Russian), 1 egg, 2/3 tsp. salt, 1 tsp. balsamic vinegar, I quickly mix this thing with the "foot" of an immersion blender, leave the "leg" in a container and pour 200 ml of sunflower-olive oil into it. Slowly I stretch my leg. And that's all.



Glaze on starch

Potato starch 10 g
Powdered sugar 150 g
refined sunflower oil 1 tsp.
Milk 4 tsp

Sift the icing sugar together with the starch. To stir thoroughly.
Add milk. Grind everything well together until smooth.
Add oil and grind well again.
The glaze is ready to go. It should drain slowly from the spoon and apply well and evenly to the product.

I put 2-2.5 kg of meat at once (more often it is inexpensive beef with veins, which I cut into pieces the size of a matchbox or a little thicker). Depending on its hardness, the time is set from 1h10min to 1h30min - Meat mode, pressure 0.7.
The calculation is as follows: for 1 kg of meat - 1 teaspoon of salt, 1 small onion (chopped at random, it will disappear anyway), a pinch of dried garlic, 1 piece of lavrushka, ground black pepper (pinch). I also really like to add a little dried herbs (dill with parsley), literally a pinch. Mix everything directly in a Teflon saucepan, close the lid and turn on the cartoon - FSE!
For Martha: "languor" mode 5-6 hours.
