ManyaThank you so much for the recipe! Such delicious bread and it is so simple! So far I've tried it with whole grain instead of rye, and replaced some of the premium with 1 grade, but everything else is strictly according to the recipe. I will definitely bake baguettes, I specially ordered the same form in Eldorado. In the meantime, I tried it with a muffin-shaped bar - it is too narrow for the usual muffins, but for this it turned out to be just right! I divided the dough in half, baked one portion as per the recipe, and put the second portion in the refrigerator. When the mold was free, I formed a bar, rolled it in corn flour, covered with a film and left it in the mold until morning (in the cold). In the morning, I cut it into a cold oven with a set t 200C. The mold was covered with foil instead of steam, after 25 minutes it was opened and baked for another 25 minutes. The loaf baked from overnight dough came out more fried.
