Wheat-rye quick brown bread (bread maker)

Ingredients

Wheat flour 220 g
Rye flour 150 g
Water 300 ml
Salt 1.5 tsp.
Sugar 1.5 tbsp. l.
Oil 30 g
Yeast 1.75 tsp
Semolina 30 g
Dry rye malt 1 tbsp. l.
Ground cumin 1 tsp

Cooking method

  • From 300 ml of water, pour 100 ml into a saucepan and bring to a boil. I pour in malt, caraway seeds and immediately remove from heat. While it is infused, I put yeast in a bucket, measure out rye flour, wheat flour and semolina, sift it, put it in a bucket; to the same place - salt, sugar and butter (you can use any butter, I now use ghee in Norwegian way (I had a lot of it and I didn't know where to stick it. But it works very well with it.)). Next, pour the remaining water into a pan with malt and caraway seeds, stir and - into a bucket. All!
  • I tried it without semolina, i.e. 150 g of rye flour and 250 g of wheat flour. The bread turns out to be more fluffy, but on the second day it crumbles very much.

Dear forum users! I offer you a recipe for quick "black" bread. I wrote the word "black" in quotation marks, because it looks only black, but in fact it is wheat-rye. The recipe is not original. As a basis, I used Darnitsky's recipe from Fugaska and quick with semolina from Elena Bo.
Try it! The bread is quick and tasty.

Thank you so much for the recipe! I did it this Saturday, I was wildly afraid - suddenly it wouldn’t be baked on “fast” mode (well, I’m such a coward!) It turned out just superb! My father really liked it. I just didn't mix the cumin into the dough, but mixed it with sesame seeds and sprinkle it on top before baking. Here's what happened.

I have an LG stove, the simplest, no bells and whistles, it has a fast mode for 1 hour 59 minutes

Unloved! In time, the fast modes of our cars almost coincide, so everything worked out for you. But in some other machines the fast mode lasts less than an hour. I think that fast "black" bread will not work in these machines.

Just why I was afraid - I somehow changed the water for kvass in quick bread (just one of the members of the forum did it, he did it), baked it. and the very inside of the bread remained a little unbaked, wet, so I had to bake it for 5-7 minutes in the oven, cut into two halves. Fancy this circus? But there was no such embarrassment with your recipe. Today I’ll come home, maybe I’ll have to bake it again, at least tomorrow, otherwise there’s a white one at home, and a large piece of pizza was left from yesterday, and a piece of roll with cheese. They may not eat so much ...

Unloved! I also have embarrassment with another liquid. For example, many people use serum, I also use it. But my whey bread ALWAYS turns out to be denser and heavier. When adding soda, the bread turns out better, but still, with plain water, the bread is both fluffier and lighter.

This time I added a "gag": 2 tablespoons of dry potato flakes, together with sesame seeds, slightly increased the liquid, mixed water with fried vegetable oil - the smell of the bread is simply amazing, the crumb is light, everything is baked! A photo from me a little later, I managed to take a picture ...

Supplement (After 3 hours): It worked !!!! I replaced half of the water with kvass, and boiled the rest and soaked the caraway seeds, insisted and added to the dough (I didn't add caraway seeds myself, I added coriander and basil). A very neat loaf turned out! And the aroma !!!

Just yesterday I purchased Daewoo DI-9154. So I decided to try to bake bread according to this recipe. Unfortunately, in express mode, the maximum time that we managed to set is 1:48. Do you think this difference is fundamental or not? I didn't find malt in stores, so, as recommended above, I replaced half of the water with kvass. The process is already underway. Let's see what happens at the output.

I baked a quick "Black" bread, it turned out not so tall, but fluffy and very tasty. Instead of malt, I brewed 1 tbsp. spoon of Saf-kvass concentrate. Saf-Levure took the yeast. Part of the oil was replaced by "fried" sunflower seeds with taste. If baking starts immediately (without delay), then there is no difference in what order to lay the products, for the dough it is better to "flour in water" and track the kneading bun, the dough is soft (but not liquid)

And it's better to bake bread on a regular prog, longer - on a quick prog the bread may not turn out normal, the dough is not ripe
