I also thought about purchasing a bread machine. The main purpose is yeast-free baked goods.
Reread many topics. For myself, so far I realized that I need to choose from the following models:

1. PANASONIC SD-2510 or SD-2511
2. Binatone BM-2068 or BM-2169
3. BORK X800 (I consider it as a "fallback" option, since the new one is expensive and the bowl is too large. Therefore, I consider a little used)
4. MOULINEX OW250132 or OW240E30 (scary reviews with bucket problems and confused programs)

Since I have no experience with yeast-free baking, the mixing and baking algorithm is not clear. As far as I understand, the PANASONIC has the following algorithm: Temperature equalization - kneading - raising - baking. For programmable ones, the ascent alternates several times with a kneeling.

While in the first place in my choice I have PANASONIC, but here I doubt whether I can bake sourdough bread without changing programs and pauses during baking?
