Ingredients

Dough:
liquid of the consistency of water (water + a little white wine or + tbsp. l. onion juice or just water / milk / whey) 250g (weight with egg)
small egg 1 PC.
salt 1 tsp
flour (sun + durum in half) 500gr
Filling:
fried meat: shashlik / grilled meat without bones (or remove from the bones) from 30% to 50% filling
mashed potatoes from 70% to 50% filling
salt pepper taste
fresh chopped cilantro (optional) 1 tbsp. l.

Cooking method

  • These dumplings were born in due time due to the fact that fried kebabs and potatoes, which were served on the same table, constantly remained and remains from the gatherings. You can, of course, warm it up and just eat it. But if you only have 6-8-10 pieces of yesterday's shashlik of different sizes, then it seems like one amount is normal, but it's ashamed to crack into a single face))), but there is not enough for all, and neither there nor here)). Moreover, it becomes a little dry after a night in the refrigerator. So that's it. We make dumplings)). There are dumplings with boiled meat, I thought. The first time I made these dumplings - it's just wow, to be honest. Because the indescribable and bright taste of meat roasted on coals is obvious and beautiful in them.
  • Dough:
  • Mix all the ingredients and let sit in the bag for at least half an hour. Or use ANY favorite and preferred recipe for dumplings dough. This is not critical.
  • Filling:
  • - Grilled meat-shish kebab / grilled meat without bones (or remove from bones), left after yesterday's feast in the refrigerator, pass through a meat grinder.
  • - Mashed potatoes, thick enough, left over from the same feast. If yesterday is not there, cook fresh. If the potatoes were cooked whole (even yesterday, even now) - wrinkle with a potato grinder or together with meat through a meat grinder - whatever you like. The addition of fried onions is allowed, cooking in a peel in the microwave is allowed, cleaning and puréing or passing through a meat grinder, everything is allowed))). Get out as you like, but we need a non-liquid puree: today or yesterday.
  • - Pepper and salt, stir. If the mass seems too thick, add milk or water to the filling, but do not overdo it. The overall consistency should be a very thick puree that holds its shape well.
  • - A little fresh cilantro is allowed. A little bit. No? And it is not necessary! And so it will be great.
  • As for the filling, I do not write the quantity (weight), because the need for the amount of minced meat strongly depends on the size and filling of the dumpling, on the methods of modeling. And on the scale of the remaining kebab))), because we always dance first of all from the amount of remaining meat. I will only write the ratio: meat up to 50% of the total filling. No more need, it will "score" everything. Better that 30% percent. The rest is potatoes.
  • If the filling ends before the dough, simply put the excess in the refrigerator. Tomorrow some more blind.
  • All. Blind rather large dumplings as you like to sculpt them (I, of course, with the help of my favorite triple from Tupperver) and cook ON STEAM, smearing the dishes with vegetable oil !! I always steam. Like manty. After boiling, the water is boiled for 10 minutes (and everything is ready, in fact, except for the dough). At the end of cooking, open the lid and let the dough "rest", that is, evaporate the excess water and "grab" so that it does not break when taken out. Everything, you can serve with sour cream. Insanely delicious.

Yes, I can be accused of perversion. But for 15 years now I have been a resident of a private house and barbecue / grilled meat is not exotic for a long time.It is fried often, for no reason (just wanted to), in any season and in any weather. And I wish you the same with all my heart))). But even if you just try these dumplings, you can put aside just a few pieces and leave until tomorrow. Because they are worth it.

No matter how many times we go to barbecues in nature, we always bring at least a few pieces of meat back home, and then after the refrigerator no one wants to eat them, but we didn’t get to stick such dumplings. I can imagine how delicious it is, dumplings with potatoes and the aroma of kebab meat, I will definitely take it for myself, because summer is just beginning here, like the season of kebabs, although we haven't opened it yet, but I already know where I will attach the leftovers of the kebab.
