Pork leg terrine

Ingredients

knuckle 1.2-1.3 kg.
carrot 1 PC.
turnip onion 1-2 pcs.
thyme bundle.
rosemary 1-2 vet.
Bay leaf 1-2 pcs.
allspice peas 3-6 pcs.
vegetable oil 3-4 tbsp. l.
Dijon mustard beans 2-3 st. l.
honey 1-1.5 Art. l.
lemon juice 2-4 st. l.
garlic 3-5 teeth.

Cooking method

Pork leg terrineSoak the knuckle overnight. Wash. Dry. Coarsely chop the carrots and onions. Lightly fry the leg and vegetables on both sides. You can add any of your favorite roots.
Pork leg terrineAdd bay leaves, thyme, rosemary, garlic and allspice.
Pork leg terrineFill with water so that the leg is almost covered with it. Salt. To cover with a lid.
Pork leg terrinePut in the oven preheated to 140 degrees for 3-4 hours.

Pork leg terrineRemove the meat, strain the broth.
Pork leg terrineBoil the broth five times.
Pork leg terrineAdd mustard, honey and lemon juice. Add half the rate first and try. Add ingredients to taste if needed. Salt if necessary. I no longer needed salt. The sauce should taste more intense than you like.
Pork leg terrineRemove the meat from the leg and tear finely. If you like the skin, then finely chop it. I didn’t add.

Pork leg terrineCover the form with cling film. Put the mass into it, level it and send it to the refrigerator for complete solidification for 3-4 hours. But it is better to hold it for 12 hours so that all the flavors are well distributed.
