Cooking method

  • This is the onion jam that really impressed me. Its harmony, wonderful soft taste and powerful thick aroma.
  • Onion jam is a French classic, not exotic, for those who love the combination of meat with sweet sauces. It goes well with meat and cheese, with pates, just for a sandwich. Has a wonderful mushroom aroma with a hint of fried onions. In this regard, I place it in the section of sauces, since this is almost always not an independent appetizer, but an accompaniment to the main course. And not a blank, despite the fact that the portion is laid out in jars and sealed. Prepared at any season and at any time. It makes no sense to prepare a ton of it for future use.
  • From the specified amount, about 1 liter is obtained. You will need a thick-walled skillet with high sides / saucepan.
  • Fry onion cut into thin half rings in oil until golden brown, add everything else and simmer for 40-60 minutes until thickened (the liquid will practically evaporate, there will be residues of thick syrup, translucent caramel onion). All)).
  • At first, the onion lets out the juice, although you throw it into the hot oil. Just because there is a lot of it and it is juicy. Nothing wrong. But evaporate the liquid on a good heat, the onion must be beautifully golden-brown, because this is the main taste of fried onion. Stand over a saucepan and stir so that it does not burn. only then add the rest and simmer over low heat. Put the ready-made jam directly hot into sterilized small jars and seal. Turn over, cover.
  • This particular recipe was taken from Nastya Monday's book. There is also thyme, but I don't put it anywhere - I really don't like it.
