Ingredients

Butter 100 g

Sour cream (kefir) 50 g
Vanillin (vanilla sugar or ground cinnamon) optional taste

Oat flakes 100 g
Flour 100 g
Baking powder 2/3 tsp

Cooking method

  • If you love oatmeal baked goods, I recommend making these quick and tasty cookies.
  • Instead of prunes, you can use any other dried fruit to taste and availability, but try the option with prunes! The cookies are moderately sweet, the prune pieces add a piquant sourness. For those with a sweet tooth, you can sprinkle the finished cookies with powdered sugar.
  • Preparation and baking will take very little time. First you need to soften the butter.
  • It is recommended to grind prunes with a blender. If the prunes are hard enough, like mine, then it is better to pre-pour boiling water over it and let it stand for a while to soften, so it will not resist the chopper knives.
  • I always drive the oatmeal for baking cookies in the microwave for 1-2 minutes to dry and give them a nutty flavor. You can not do this, as you can and not grind them additionally after that, but I usually grind, unless these are small flakes for quick cooking.
  • So, our prunes are crushed, the flakes are ready, the butter has softened - you can turn on the oven to heat it up to 200 degrees.
  • Grind the butter with sugar, vanilla and a pinch of salt, add the egg, mix and beat until fluffy. Now it's the turn of sour cream (or kefir), chopped prunes and oatmeal, stir and add flour with baking powder. Mix in quickly - the dough is ready. It is thick and sticky. We spread our dough on a sheet covered with a Teflon mat (or baking paper). We level it into the layer, its thickness will depend on the desired texture. The thinner the layer, the more crisp the cookie will be. The size of my rectangle is 31x24, the thickness is about 0.7 - 0.8 cm.

  • Cookies are baked for 15-20 minutes, until browning. You need to cut into squares immediately, while it is hot. In order not to spoil the Teflon rug, I use a wavy cut. Leave to cool on a baking sheet. Sprinkle icing sugar on the cookies if desired.

Excellent cookies, I just read the recipe and immediately realized that it was mine! Today I baked, now this cookie will be my favorite of all oatmeal.
There were no prunes, I took raisins, but they are black and with a decent sourness, so the replacement was quite "congruent", I replaced kefir with whey - I don't always have sour milk, unlike whey; I calcined a little flakes in a frying pan and punched them in a grinder along with raisins into small crumbs. The dough looked a bit weird, it looked more like sprat pate, but the cookies came out excellent! Cut into squares with a pizza knife.
I'll take this recipe as a basis, but next time I will replace white flour with c / h and try it with different dried fruits.
