Now the next season of home canning is coming to an end in one of my kitchens. There are many things that make life easier for the hostess in this difficult time. But not everyone knows about them, even if they have seen them. I want to open a separate topic where you can share feedback and advice on this matter
Here I will tell you what I personally liked the most! I am sure that many will take at least something for themselves. Or they will tell you how they are more effective in this difficult time
The most important thing in the kitchen at any time, and especially in the winter spinning season, is of course the knife! I found myself the perfect KNIFE!
This is a Victorinox knife, model 6.7233 or 6.7733, costs about 300 rubles, the models differ in the shape of the knife tip, I did not see much difference in work. Slim, sharp, not blunt! Using this knife as an example, I understood what the expression “goes like clockwork!” Means. This is really so! I have been using it for almost two years, I have never sharpened it, I have not lost its sharpness! I cut everything for them, I was especially impressed with cutting tomatoes (it does not press, but it cuts even the most delicate tomato!). I like that bread cuts easily, does not crush, there are few crumbs. Onions often creep into scales at the end of cutting, but here the cloves are easily cut through (and somehow hold something) and there is no such spread. Recently I accidentally grabbed another knife similar to him, to cut a cucumber. I feel - something is not right, some thick-skinned cucumber is caught, figs are cut. Then it came! This is not a Victorinox, therefore it is not so easy to cut a cucumber! And once this other knife was in my favorites! Many relatives and friends on my tip bought such knives, everyone is very happy! Even if earlier pets had large knives (like my husband), now they have completely switched to Victorinox.
The wrench for twisting the cans is also extremely important! I really liked Kremenchugsky!
It goes very softly, easily. Fatigue is felt only after about 30 cans. I make about 7 turns, then the key does not go further - as if it bumps into an obstacle. I twist back the same 7 turns. Everything, you can roll up the next can!
I bought different covers, most of all at the moment I like the TM "Svetlana".
All rubber bands are always in stock (and other brands sometimes have 1-2 pieces missing ...), they never make a "wave" when rolling, while others often did it. I sinned on an old key or non-standard cans' necks, but it turned out that these were poor-quality lids! Soft metal, or what ?!
There are many different shovels on the farm, but I like this one the most!
In addition to being silicone and withstanding high temperatures, it has a scapula edge with a "corner". Others with a rectangular / trapezoidal edge will not pick everything up so well, but this one will take it all out! Well, just a very cheerful color - bright orange! I know, I know how many of the same orange and green maniacs are here !!!
I tried many different peelers. In the end, I settled on this one - VICTORINOX Vegetable Peeler model 7.6073.3, inexpensive (price about 160 rubles), but very high quality.
It removes the skin very thinly, sharp-sharp! Fits comfortably in the hand, streamlined "ergonomic" shape. I picked myself a vegetable peeler mainly for potatoes, this one made it 100%! When peeling, the skin immediately falls off, does not stick either to the potatoes or to the peeler. All other vegetables are also peeled at once! Well, since this is from Victorinox, I am sure that it will not dull for a long time!
During harvesting season, you need to clean up a bunch of bell peppers. I used to do it with an ordinary knife, then at the Bread Maker I found out that there are special devices for peeling peppers. I bought it in an ordinary household store on the market, already for 50 rubles!
Well, I really like her at work! Almost like in advertising - just like one-two-three!

A funnel with a wide throat - I learned about such a miracle here, at the Bread Maker.
With the help of it it is very convenient to lay out hot salads / jam in the jars, nothing will fly past the jar!
And then before the cans had to be wiped after twisting, because something must have blurted out on the walls of the can from the outside. But salads often contain oil in the recipe, and the jam is sticky ... And all this must be wiped off the jar!
A lid with holes for draining the liquid, I use it with 2 and 3 times pouring tomatoes / cucumbers and compotes.
They are very different. The most convenient for me is when the holes are not only in the lower part of the lid, but as in the photo - the holes along the entire surface of the lid are not very small. So air freely enters the jar into the upper holes, and the liquid pours out into the lower ones. And the holes are not very clogged.
The airfryer is also a cool thing to help the hostess in conservation.
Last year, I sterilized banks in the AG, none of them exploded! This year I switched to sterilization in AG completely. Very simple, no steam and boiling water, less potential injury in the kitchen.
For some reason, for some reason, for some reason, my cucumbers swelled up in my cucumbers every year, I made them three times. Last year I did this - I poured cucumbers with hot brine into clean unsterilized 2L jars and set them for 20 minutes at 265 * C at high speed. I put the cans on the lower grate, used an expansion ring. I took out the rubber bands from the lids, sterilized them without them (so that the rubber would not deteriorate from such a high temperature), and when I took out the cans from the AG, I closed them with boiled lids with rubber bands. Some of the jars were screw-cut, during sterilization they simply covered them with lids, and after they took them out they screwed them up completely. Fuss much less, the heat in the kitchen too.
My Hotter fits 4 pieces of 2L cans or 5 pieces of liter cans or 7 pieces of 0.7-0.5L cans. 3L does not fit, does not pass in height
If I lay out the ready-made cooked (only from the stove) salad / jam, then I put it on 150 * C, the speed is high, the time I set is this: 0.5-0.7l cans - 10-15 minutes, 1l - for 15-20 minutes, 2l- 25- 30 minutes. In this case, I use the covers immediately with elastic bands, the temperature is not so high that the elastic bands melt. In any case, I boiled them beforehand last year, this year I used some of the lids without boiling. Let's see how they behave. If everything goes well, then next year I will also not boil first, if they are sterilized anyway at 150 * C
Another one, already for rolled up cans. It costs 100 rubles, I could not even believe that it was a really useful thing.
I got on discounts and nevertheless decided to buy it for 70 rubles. To my surprise, it actually works! Put it on top of a jar with a screw cap, twist it counterclockwise, pop - and the lid opens easily! And how many problems there were before - I tried to pick it up with a knife, and with the edge of a fork, and rolled sideways on the table ...
