We sculpt dumplings together: I roll on a dough roller, my husband applies minced meat and sculpts "dumplings" on Gefu's raviolnitsa, and since the minced meat is now (thanks to you) I have equal portions, then the result is excellent, otherwise my husband's eye is "wrong" then thick - then empty.
I also have a Soviet book, but compared to Gefu, the dumplings from the book are self-indulgence, a trifle, we love the mouth to be happy with the dumplings!

What I like about this method of sculpting dumplings is that you can add a little more water to the minced meat, for greater juiciness, and if you sculpt from completely defrosted minced meat, excess moisture will interfere with the molding. And yet, I do not shake the dumplings out of the mold, but pull out each by the corner, glue the corners diagonally and you're done.

The minced Horso blank is not only too tall for Gefu, but also too narrow. With partial defrosting, pressing, and not only shorten it, but also flatten it a little, expand the hole to size. If you build up the legs and insert the frozen blank, then it will fit in height, and in width: there will be a lot of free space around it, there will be a lot of air in it, and the dumplings will seem to be inflated and will immediately float during cooking.
