My ready-made cutlets are quite average in size and weight (63 grams), in my opinion, it is definitely not necessary to make cutlets less in weight. Here is some information for thought. I would look for shapes where the cells are large, in the sense that they are flatter (larger area), but not too deep (preferably 2-2.5 cm deep, 3 cm is too much, 3.5 cm is too much).
