Ingredients

the tips of the vine with leaves 1.5KG
Water 6 liters
Sugar 1.5KG

Cooking method

  • Many years ago, somewhere on the Internet, I found such a recipe for champagne, and since then it has taken root in our family and among friends. Easy to prepare and drink, cost-effective in terms of preparation time and ingredients.
  • We cut off the tips of the vine (I combine the chasing of grapes and the preparation of this drink) together with young tender leaves (about 50-60 cm), young stepsons, cut them 15-20 cm each. Fill them with boiling water and leave them for 3 days in a cool dark place. You don't need to stir anything. After 3 days, squeeze the branches and drain all the liquid into a bottle, add 1.5 kg of sugar (you can add 1 kg, add the rest in a week). Put a medical glove on the neck of the bottle. If all of the sugar has been filled in, then the bottle is left alone for 24 days. Then we pour the resulting drink into bottles, seal tightly and leave the drink for another 2 weeks for final ripening.
  • Try it and you won't regret it! It turns out exactly "champagne" - depending on the ripening period with a light smoke or foam fountain when opening the bottle, the strength is about 9-10 degrees. It is drunk like grape juice.

If from the first harvesting of shoots (we have it in the second half of June) champagne tastes like grape juice, then the early autumn drink takes on the taste of a very good wine (it tastes better than many table wines). Whoever tries it for the first time does not believe that it is prepared, one might say, from compost raw materials 😀

Elya, I leave the bottle on the street, now it is still warm and I determine the end of fermentation by the change in color in the bottle, the absence of bubbles. For long-term storage, I pour it into liter bottles for wine with a sealed cork on a wire, for autumn consumption in liter or 1.5 liter plastic bottles, screw the corks tightly. When opening the bottles, do not shake, do not shake, do not keep in the sun, otherwise the fountain cannot be held.
I store bottles in the basement (not very cold, so very warm in autumn). I don’t remember at least one bottle exploding in all the time. I store the cider there, but it ends up in the basement later, when the temperature is already around 12-14 degrees.




Elena, I can't say anything about the refrigerator - I've never done that, I keep it in the room myself, it's not very cool either. When it's really hot, I put buckets and tanks in a tub of cold water.
