Cooking method

  • Another cookie recipe from childhood. I don't even know which one I like more - this is Leningrad or Leningradskoe. Of course I do with Ken ...
  • Raw almonds, not peeled, grind into flour or relatively fine crumbs. The food processor coped with this in 1 minute. The speed gradually increased to 5.
  • Almond cookies according to GOST
  • Transfer the nut flour to the bowl of the food processor, mix with the sugar.

  • Add proteins (NOT WHIPPED). Beat at a speed of 5-6 for 3 minutes.

  • Set the temperature to 75 *, turn the speed regulator to the right by 1 in a circle. Warm up the mass to a temperature of 36 *. I confess I did not take a picture of the appearance of the dough, take my word for it, it is liquid.
  • Add flour and stir well. I intervened with a spatula. Dough with the consistency of liquid sour cream.
  • Almond cookies according to GOST
  • Preheat oven to 190 *. Place the dough in a pastry bag and place on a baking sheet lined with baking paper. The dough is quite liquid, it will spread, so the distance between the cakes must be left at least 3 cm.
  • Bake at 190 * 15 minutes. Remove from the sheet after cooling completely.

Note

You can do without Kenwool KM096. The dough can be heated on the stove, in a water bath, with constant stirring.
