It was precisely the sauce that remained in a liquid state (and to fix it, I even tried to pour starch into the pan and heat it up) ...
but it turns out (!), you just need to add starch at the stage of making the sauce, where you mix everything (and, which is typical, without adding anything: "mirin", "black" vinegar).
