Fried tortillas stuffed with cottage cheese and green onions

Ingredients

For the test:
Butter (margarine) from the freezer 200 gr.
Egg 1 PC.
Vegetable oil 3 tbsp. l.
Vinegar 6% 2 tbsp. l.
Salt 0.5 tsp
Cold water from the refrigerator read the recipe)
Flour 3.5-4 faceted glasses
For filling:
Green onion 1 bundle
Dill or parsley option
Egg 2 pcs.
Salt 1/3 tsp
Curd (not pasta or grain) 500 gr.
Vegetable oil for frying

Cooking method

  • Dough preparation:
  • We take a glass with a capacity of 200 milliliters. We break the egg there, add salt, pour in vinegar (I took 1.5 tablespoons of 9% and diluted it to normal with water) and vegetable oil. Mix well with a fork. And add cold water (very cold) to a full glass. Stir and send to the refrigerator.
  • On the table or in the bowl of the combine (but not in the bread maker) we sift three faceted glasses of flour. Three cold butter on a coarse grater or cut into pieces with a knife.
  • Fried tortillas stuffed with cottage cheese and green onions
  • Mix butter with flour and grind by hand or chop with a knife into crumbs.

  • Then pour in cold liquid in three steps and quickly knead the soft dough with your hand. Its consistency is heterogeneous, flakes. Only if necessary, add a little flour, but no more than 1.5 cups.

  • Immediately divide the dough into 7 parts - about 150 gr. We wrap each part in foil and put it in the refrigerator for at least 1 hour. You can store the dough for up to 5 days.

  • Chop the onion and herbs. Break 2 eggs into cottage cheese, salt, mix. Add onions and herbs.

  • It is not necessary to get the dough in advance. We take one piece at a time, roll it into a conditional circle.
