Whey Chocolate Cupcake (Cupcake GFW-025 Keks Express)

Ingredients

Wheat flour, premium 200 g
Potato starch (without it) 1 tbsp. the spoon
Cocoa powder 3 tbsp. spoons
Granulated sugar 250g
Salt 1/4 teaspoon (pinch)
Baking powder 1.5-2 tsp
Serum 250 g
Egg 2 pcs
Vegetable oil 75 g
Chocolate drops or chocolate pieces 2 tbsp. spoons
Vanillin (or vanilla sugar) taste

Cooking method

  • Mix dry foods (flour + starch + cocoa powder + baking powder + sugar + vanillin)
  • Beat the egg and salt with a mixer, add the whey and vegetable oil, beat again on low speed. Pour the liquid mixture into a dry mixture, stir, add chocolate drops (you can do without them). I added three assorted candies with dark filling, finely chopped with a knife.
  • The dough turns out like thick sour cream. Exactly 2 muffins come out of a given quantity of products in a cupcake.

Note

In a cupcake, baked according to the algorithm - 2 minutes, turn over, 12 minutes - turn over + 1 minute (watch when ready, the last minute may not be needed). Preheat the muffin bowl and lightly grease with oil. No lubrication is needed for the second cake.
I took the recipe on the Povarenok website from Anastasia AG, for which many thanks to her! Whey recipes are in great demand for me!
Well, of course I made changes to my taste. The author's recipe for soda - 1 tsp instead of baking powder and an additional 2 tbsp. tablespoons of lemon juice to whey. I really feel soda in baking, so I use baking powder. Sugar in the original is taken from cane, I have ordinary sugar. I do not advise reducing the amount of sugar, the structure of the cake and the taste will be lost. The cake tastes moderately sweet, as both cocoa and whey quench excess sweetness.
The crumb turns out to be very fluffy. I bake two cupcakes, because on the second day it becomes even tastier!

Rita, as much as I bake any cupcakes, I study so much. I usually turn over all the cupcakes in one and a half to two minutes. Now I have adopted Tatyana's method - I heat the cupcake to a green light, turn it off, spread the dough, turn on the cupcake and turn it over after turning on the green light (usually it takes 1.5-2 minutes). I haven't tried this method on this cupcake yet, but it works great for everyone else!

Soda is a very strong baking powder by nature. And if you just put a couple of tablespoons of baking soda in the dough without looking, then - yes, you will get an almost black color of baking. But it will be impossible to eat (I will also show one such experiment - a little later). The baking soda must be acid-balanced in order to work properly. But the usual amount of soda (1/4 tsp for a glass of flour) is not enough to give a noticeably dark color to the dough ... The well-known Shirley O \ 'Corriher once attended to this question and in her book "Bakewise" told how to proceed in this case. Madame O Corricher suggests mixing soda with cocoa, diluting this mixture with hot water - and even boiling a little. Under the influence of heat, some of the baking soda will naturally evaporate, yet having time to color the mixture incredibly dark. Then add all the remaining ingredients according to the recipe to the dough - and bake an incredibly dark chocolate cake "
