Scotch barley soup

Ingredients

lamb (shoulder blade, neck) 700 g
pearl barley 1 1/3 ms
peas 1 1/3 ms
carrots (small) 2 pcs
turnip (medium) 2 pcs
celery (root) ~ 50 g
onion (large) 1 PC
thyme fresh bunch
parsley bunch
salt taste
black pepper taste

Cooking method

  • Scotch barley soup
  • Boil lamb broth. Separate the meat from the bones and cut into pieces.
  • Peas (I have it from Mistral does not require preliminary soaking) rinse well.
  • If the barley has not been pre-soaked in water overnight, then rinse it, add water and leave while vegetables are being prepared for the soup, and immediately before putting it into the soup, rinse the barley and pour boiling water for a couple of minutes.
  • Peel and cut the vegetables into small cubes.
  • In a preheated multicooker saucepan, lightly fry the vegetables.
  • Add pearl barley and peas to the pan, pour the broth to the maximum mark, add salt, pepper, and cook on the Porridge program for 15 minutes, pressure 0.7.
  • After the end of the program, when the pressure has dropped, open the lid, add pieces of meat, thyme and parsley to the saucepan. Close the lid and leave the soup heated (30 min-1 hour).

Note

The key points of the thick classic Scotch Broth are: lamb broth, actually boiled lamb, barley, dry peas, onions, carrots, rutabagas (or turnips), parsley. The rest of the components vary. The most commonly used spices are thyme or rosemary.
