Ingredients

Mash 1 incomplete glass (~ 190 g)
Lamb broth (beef) 3-3.5 l
Carrot 1 large
Bulb onions 2 pcs.
Tomatoes / or tomato. puree / or tomato. paste 3-4 pcs. / 5 Art. l. / 1.5 st. l.
Spice:
Cinnamon 1 stick
Zira (cumin) 1 tsp
Coriander 1 tsp
Fenugreek 1 tsp
Sweet paprika 1 tsp
Dry mint 1 tsp
Garlic taste
Lemon in thin rings 2-3 per serving
Cilantro greens bundle
Basil greens bundle
Salt taste
Black pepper taste

Cooking method

  • Dedicated to Mashhurda Mashhurda
  • Saute finely chopped carrots and onions until soft, add high-quality tomato paste (or tomato puree or chopped peeled tomatoes) and simmer over low heat for 10 minutes. I took a blank (I make a lot of it in MV at once, I freeze some of it, I use it for stewing lamb or cooking soups - again, it significantly speeds up the process).

  • Grind spices (part of the mint can be saved for dressing portions)

  • and fry quickly in a dry skillet. Hide here! The smell will blow your head off!
  • Make sure that the spices do not burn!

  • Add frying to the spices, simmer for ~ 5-7 minutes, so that the essential oils of the spices pass into the vegetable mass.

  • Add mung bean (without water, in which it was soaked).

  • Add a lump of broth. Pour in the broth, add a pod of hot pepper. Salt to taste.

  • Cook over low heat ~ 30 minutes from boiling (until tender Masha masha). We will get a thick rich soup, just for damp autumn days - it warms both body and soul!

  • Season with pounded dry mint, chopped garlic, chopped cilantro and basil, lemon, and freshly ground black pepper.

Note

Mung bean are small green beans, in general, they are legumes.
They are very common in the cuisines of Central Asia, China, India (they have this mung). By the way, in India from shelled mung bean (and they have shelled beans - this is gave) prepare dhal. Oh how!

Today I somehow accidentally nailed this recipe. Probably, after all, it was NOT by chance, because almost all the ingredients were in stock. The broth was strong beef (freshly boiled + frozen concentrated), and there was no fenugreek. I cooked it anyway! The smell is awesome! My husband came home from work, waved a healthy plate, and said it was yummy !!! Now we will cook this soup more often. Thank you!!
