Mushroom solyanka with eggplant

Ingredients

fresh champignons 250 g
eggplant (large) 1 PC
bulb onions 1 PC
carrot 1 PC
garlic 2-3 pcs
peeled tomatoes 1 can (400 g)
prunes 60-100 g
olives 60-100 g
olives 60-100 g
ginger (root) 1 tsp
pepper, salt
hot water 1.5-2 l
to serve
parsley, dill, lemon, sour cream

Cooking method

  • Peel and chop the vegetables. Finely chop the onion and garlic, grate the carrots, cut the eggplant into cubes, cut the mushrooms into slices, lightly chop the prunes, cut the olives in half.
  • I cooked a hodgepodge in MV.
  • Start the FRYING program.
  • After the signal, add oil, fry the mushrooms and put them on a plate.
  • Then fry the onions, garlic, carrots and eggplant in a saucepan until soft, then add chopped tomatoes from the jar along with the juice and simmer a little more. Turn off the program.
  • Add prunes, mushrooms and olives to a saucepan with fried vegetables.
  • Pour in hot water, pepper and salt to taste.
  • Start the VEGETABLES program, pressure 0.7, time 8 minutes.
  • After the end of the program, wait until the valve drops.
  • Pour the prepared hodgepodge into plates, serve with lemon wedges, sour cream and serve with fresh bread.
