Whole grain rye-wheat flatbread with kefir

Ingredients

whole wheat flour 1 glass
whole grain rye flour 1 glass
oat bran 1/2 cup
kefir 1 glass
egg 1 piece
salt 3/4 teaspoon
soda 1 teaspoon
lemon acid 1/4 teaspoon
glass 250 ml

Cooking method

  • Mix flour, bran and salt.
  • Beat an egg into 3/4 cup of kefir and add soda, beat slightly.
  • Pour into flour mixture, stir.
  • Pour citric acid into 1/4 cup, stir.
  • Pour into dough, knead.
  • The dough is sticky.
  • Lubricate your hands with vegetable oil.
  • Put the dough either on a silicone mat or on baking paper.
  • Form a flat cake 2 cm high.
  • Prick with a stick or toothpick.
  • Moisten with water, sprinkle with sesame seeds.
  • Bake-

You should not always change the baking soda to baking powder. For example, if honey is present in the dough, then soda must be required.
In other cases, you can replace baking soda with baking powder.
Based on my experience:
- if the baking powder is from 1 tsp to 2, then soda needs 0.5 tsp;
- if the baking powder is less than 1 tsp, then the soda should be taken half the volume of the baking powder.
And, accordingly, vice versa:
- if soda in the recipe is 0.5 tsp, then baking powder needs about 1.5 tsp.
