Ingredients

Biga:
dry yeast 0.25 tsp
wheat flour of the highest grade 100 g
water 65 g
Dough:
biga all
dry yeast 3 g (1 tsp)
wheat flour of the highest grade 230 g
mozzarella serum (water) 140 g
salt 4 g
sugar 10 g
olive oil 40 g
Filling:
tomato sauce 2 tbsp. l
ham
hard cheese
Mozzarella
bacon
tomato

Cooking method

  • Biga:
  • Mix yeast with flour, pour in water. Stir so that the flour is evenly moistened.
  • Tighten the container with sponge with foil or close the lid.
  • Leave to ferment at room temperature for 40 minutes, then refrigerate for 12-48 hours.
  • Dough:
  • Before kneading the dough, allow the dough to warm up at room temperature for about an hour.
  • Mix yeast with flour, add whey, salt, sugar and bigu.
  • Knead for 5-6 minutes. Add olive oil to the dough in small portions.
  • Knead a soft dough. Leave to ferment for an hour and a half.
  • Divide the dough into two parts. Stretch each of the parts around. Brush with tomato sauce. Lay out the filling.
  • Bake in the Princess pizza maker for 12-15 minutes.
