Asparagus bean salad

Ingredients

asparagus beans in pods 3 Kg
bulb onions 1 kg
carrot 1 kg
ripe tomatoes, red 2 Kg
vegetable oil 300-400 g
salt 2 tbsp. l
sugar 6-8 st. l
vinegar 5 tbsp. l
ground cinnamon 0.5 tsp
ground black pepper taste
red sweet pepper taste

Cooking method

  • Cut the asparagus beans into small pieces and boil for 10-15 minutes.
  • Cut the onion into strips or half rings, grate the carrots on a coarse grater. Lightly fry the onions and carrots in vegetable oil.
  • Make juice from tomatoes. I cut them into pieces, boil them and rub them through a sieve. You can simply mince the tomatoes. Or make the juice in some other way.
  • Next: put beans, onions with carrots and all other ingredients in tomato juice.
  • Simmer after boiling over low heat for about an hour.
  • Arrange hot in sterilized jars and roll up. Can be consumed both hot and cold.

Note

I sometimes make frozen beans with this recipe. In smaller proportions, of course. Or when there is still little of it and it is too early for workpieces.
Delicious as a hot side dish or as a cold snack.

I blash beans for freezing in boiling water, cut into small pieces. I put the prepared beans in a large sieve or colander and put them in boiling water in a large saucepan. Literally for 30-40 seconds, so that it only scalds slightly. As the water drains, I put it in bags and in the freezer.

I keep the beans in boiling water for no more than 30-40 seconds and immediately take them out. This time is very short for blanching and, when it cools down, it warms up a little more. If cooled in cold water, then it should be kept in boiling water longer.
Sometimes I just pour boiling water over, if not a lot of beans

Changes, but not much. If the beans are green, then after blanching they become olive green. And the yellow one is practically the same
