Semolina porridge from Baba Mani

Semolina porridge from Baba Mani

Ingredients

Semolina (better than T brand) 3 tbsp. l.
Milk 1 liter
Granulated sugar
Salt

Cooking method

  • If your kids don't like semolina or milk froth, then this recipe is for you!
  • I'll tell you the background a little later. And now I'll talk directly about Baba Mani's porridge. Ideally, this porridge should be cooked in the oven. But I adapted the recipe for the oven.
  • You need to take semolina and fry it in a dry frying pan with constant stirring. You need to take exactly 3 tablespoons.
  • First, the groats are light.
  • Semolina porridge from Baba Mani
  • Then it becomes more brownish and gives off a pleasant slightly nutty aroma. Don't overcook. Unfortunately, my camera does not have very good color reproduction.
  • Semolina porridge from Baba Mani
  • At this time, we put a saucepan with milk on the fire. Add salt. Do not add granulated sugar! As soon as the milk is ready to boil, in a thin stream, while stirring, we begin to pour the semolina. Then cook for 5 minutes on low heat, stirring constantly. At this time, we turn on the oven for heating (I have 200 degrees with convection).
  • Semolina porridge from Baba Mani
  • Pour the porridge into portioned bowls or pots. The volume of dishes should be taken twice as much as you expect to eat porridge. It boils down.
  • Semolina porridge from Baba Mani
  • We put the bowls on the top shelf in the oven. At this time, we measure out the amount of granulated sugar that you plan to put in the porridge. I have 1 teaspoon per bowl. We measure, but do not use everything at once! We are waiting for a thin warbler to form on the porridge and sprinkle it small the amount of sugar.
  • Semolina porridge from Baba Mani
  • Then we wait for the moment when the warbler will become thicker and redden.
  • Semolina porridge from Baba Mani
  • We drown the foam in porridge with a spoon. It turns out like this:
  • Semolina porridge from Baba Mani
  • For the first time, I advise you to note the time how many minutes it takes to form a ruddy foam. It took me 10 minutes.
  • And now we repeat several times what we did earlier: sprinkle the surface of the porridge with a little sugar, let it form a ruddy chaff, drown it. And so on. In order not to forget, I turn on the timer. And I put it on for 10 minutes.
  • After we have lowered 5-10 kernels (the better the milk, and the larger its volume, the more foam is formed), we proceed to the final chord.
  • When we sprinkled the porridge with granulated sugar for the last time, we count down half the time required for the formation of the chaff (I have 5 minutes) and turn off the oven without opening it. We leave the porridge there until it cools. I forget about her until the morning.
  • If the oven does not keep heat well, then you need to brown the foam properly, that is, hold the porridge for the last time for 10 minutes, and not 5 in the oven. Then take out the porridge. Cover and wrap well with a blanket. And then just wait until it cools down.
  • Usually I cook this porridge in the evening. In the morning you can warm it up in the oven, or you can eat it cold.
  • Semolina porridge from Baba Mani
  • If you are a fan of fermented milk products, add a little sour cream or kefir to each bowl of cooled porridge and leave it warm for about 6-8 hours. Get excellent fermented baked milk.
  • I tried adding vanilla, candied fruits, jam, honey, nuts, etc. But I didn't like it. This all clogs the magic taste of stewed porridge.
  • But you can vary it with cereals. Instead of semolina, I added millet, rice, couscous, etc. It also worked out well.
  • I will make a reservation right away that I have not tried to cook such porridge with powdered or ultra-pasteurized milk. I take either homemade, or from our factory, which turns sour.
  • Porridge turns out to be quite thick, but tender.
  • Semolina porridge from Baba Mani
  • If you do not tell the children that this is semolina porridge with foam, then they are unlikely to understand themselves. Try to surprise your little ones.
  • P.S. By the way, semolina is the only one that is digested in the lower part of the intestine, moving through the intestines, it cleans it.It is recommended to eat it for people with gastrointestinal diseases. It saturates for a long time, while not creating heaviness in the stomach. And if you choose cereal brand T, that is, made from durum wheat, then semolina will be doubly useful.
  • Previously, only very rich people could afford semolina porridge. She went on a par with truffles and asparagus.
  • Let us and we will from time to time allow ourselves such a refined breakfast (although an ordinary peasant woman came up with it).

The dish is designed for

0.5 liter

Time for preparing:

1-1.5 hours plus 5-7 hours for cooling

Cooking program:

stove, oven

Note

This is a saying, but a fairy tale, a fairy tale will be ahead ... (C)

In the summer, I often visited with my beloved granny. Baba Mani's.
She was petite, dry, but strong and hardy. I was always amazed at her strength. Willpower and fortitude. She survived the revolution, famine, war, occupation, exile ... But she never complained about life. And if I asked her to tell about the past, then I narrated simply, without strain, but with a sense of humor. I would say so about a trip to a resort.

And how much she knew poems and fairy tales !!! Although she herself had only one class of the parish school.

Once my grandmother made me semolina porridge. I went up, looked and snorted: "Bee, semolina with peeeeyes ..."
Granny did not say anything, but went to heat the stove. It was already evening.

At night, I always asked Baba Manya to tell a story. This has been our tradition. I still remember these lovely moments. With dexterous movements of her habitual hands, Granny drew the curtains, and sometimes closed the shutters. A pleasant twilight filled the room. And the calm, murmuring voice of Baba Mani penetrated into every corner of the quiet room. Only the crackling stove and the clock with its eternal "tick-tock" allowed themselves to slightly invade the illusion of magic, adding some charm to it.
I climbed onto the bed, wrapped myself in a homemade blanket made of multicolored rags and listened to every word, plunging into a pleasant trans-half-nap.
Granny never repeated herself. Each time the same fairy tale was with new variations, a new plot, and sometimes new characters visited the story.
That evening, Granny interrupted her story from time to time and went to the kitchen for a short while.
I often fell asleep without listening to the fairy tales. It happened this time too ... And in the dream the fairy tale continued. I saw Alyonushka, the Gray wolf, Morozko, the Sorcerer ... Children's dreams are lovely. Light and carefree ...
And even if you dream of something terrible, then grandma will quietly say:
-Shhhh ...
Turn it over and carefully tuck the blanket over. And another dream will come. Sunny and joyful ...

And in the morning my grandmother called me to breakfast. On the table were beautiful clay pots. From above they were covered with ruddy foam. But not "beeeeee, peeeeeenkoy", but FOAM !, almost the same as on my favorite potatoes stewed in sour cream! I didn't even think about being picky. With great pleasure I quickly ate the contents of the pot. And grandmother ate slowly, without haste ...
When I tried to scrape off the froths, my grandmother, which had been fried to the pot, asked:
-Well? Liked?
-Of course!!! What was it?
- Semolina porridge with foams.
And grandma laughed ...

Since then I have come to love both semolina porridge and foam.

Ikra
toffee, both porridge and history are very good! I remembered my grandmother Shura ... And our stove. And although she was not an expert in cooking, all children's emotions are absolutely the same ... Thank you!

And I also adore ordinary semolina porridge, and with such foams, you can probably swallow your tongue! Irina, thanks for the porridge and the story! Probably many have now remembered their grandmothers and their amazing tasty secrets with which they pampered us! My grandmother baked awesome cakes for breakfast in a Russian stove, and we ate them with our homemade sour cream. Still, it's great that we have such warm childhood memories of our grandmothers!

And how I respect semolina porridge! If not laziness happens, then I cook myself a little before work. I love a thin one, so that you could pull from a spoon with your lips. It's a pity that the daughter heard enough about the dangers of semolina, like it is very high in calories. And we are like all on a diet.

Irina, wonderful porridge and history with it 🔗
And my semolina porridge is loved, because I rarely cook it.

The calorie content of semolina is lower than that of the now fashionable quinoa, couscous or bulgur.
Moreover, this recipe contains only 1.5 tablespoons of cereal per 250 ml serving.
True, milk is boiled down and becomes more high-calorie. But you can take the one where the percentage of fat is lower.
Everything is relative.
Innushka
I love semolina since childhood and often pamper myself with it)

How sweet and warm in my heart from such a sincere story and amazingly tasty porridge, Irochka!

And porridge is a kind of lazy version of Guryev's.
You could say that. I cooked Guryev porridge. I didn't like it very much. The delicate taste of stewed milk is interrupted. For some reason, Guryev's porridge reminds me of kutyu more.
And this porridge is amazing precisely for its simplicity and unconstrained taste. I often eat it with my eyes closed in order to better feel all the nuances.
Alenka43
You need to try, otherwise ordinary children are not at all))
toffee
Alenka43, try it. This porridge does not look like ordinary semolina.

Irisha, it is with great pleasure that I dive into your recipes and the stories associated with these recipes!
And, of course, I remember my beloved grandmothers!
I so want my children to experience the same emotions, the happiness that I had in childhood !!!
But, my mom is a modern, emancipated woman. for some reason now everything is different!
toffee
Irina F, IRINA, Thank you.
Now time is running differently ...
This year has just begun, and soon the next will come.
The granddaughter seems to have just been born, but she is already a year old. The elder, in general, will go to school next year. And it seems like I just rolled him in a stroller yesterday ...

I myself notice that I pay much less attention to my grandchildren than my grandmothers. True, they were retired. And I have almost 10 years before her, at the best.
I hope that I will pay more attention to my great-grandchildren.
kolobok123
Super recipe! And the story is magical ... my grandmother told me all sorts of stories too .... Thank you.
toffee
kolobok123, Thank you!!!
They are such grannies ... They always have enough time and imagination to tell a fascinating fairy tale to their grandchildren. In any case, our grannies were like that.

So I was against the decoy for the last 7 years. But yesterday I changed my mind abruptly. On NG I got very sick: doctor: And the first thing I wanted to eat after a few hungry days was man. porridge!!! I cooked a little. But the whole family also wished this porridge: girl-yes: And this despite the plentiful Christmas table !!! : sanelk: So I thought ..... the body knows better what it needs. Yes, and before that fools lived, man. porridge was included in the menu of all canteens, not to mention children. gardens.

Irina, thank you for this recipe. We must try to do it.
P. s. now the child asked for porridge again.
Damn, and when and who will finish the meat and salads?
toffee
It's time to send salads for junk. More than a week have already been.

And porridge is a good thing !!! Especially after loading the stomach.

Thank you for your kind words!
dandelion
Irin, what are you thinking ... WEEK BJ !!!!! You give: girl-swoon: We cook, fry, steam and set the table for Christmas ALWAYS again! And the dishes are never delayed more than 2 days. Friends that are not enough? Yes, and there were Moscow guests, we specially slaughtered the wild boar, we made homemade sausages, brawn, and seldeson. Yes, that there meat and salads - I managed to make 4 cakes (and all different) in a week, baked every other day. And they ate everything, treated their relatives.
Killed on the spot !!!

olgavaswhat does it taste like?
olgavas
dandelion,
I don't even know what it tastes like. For semolina porridge with baked milk from the oven, but this is no longer porridge in the usual sense, this is already a dessert.
toffee
dandelionOh, I didn't think .... We went to our mothers for Christmas. And I didn't cook anything this time. By inertia, I projected my situation onto yours.
So I laughed !!!! She lifted her spirits by her own stupidity !!!!

olgavas, Olga, excellent porridge turned out !!!

That's for sure!
If anyone ate syutlach, then this semolina looks like him.
But it is even tastier, since the foams sink to the bottom several times. Therefore, the taste is richer.
dandelion
Irin, hello! I really envy for the kindness !!!! visit mothers))))) (y) And we have such mothers, they are grandmothers, that everyone loves to come to us. And not just to visit, but to the table set !!!!
So that the word WEEK also hung me up. Here at least a day to cook (dream) Children with their friends also help to dispose of.
In short, I'm tired of no strength

And we have everything according to the scheme: 31-1 - we are all at a party, the 2nd is the final meal (with us), the 3rd is at the goddaughter's birthday, the 5th is at the son-in-law's Birthday, the 7th is to the parents On the 13th we are going to my mother (the anniversary of her acquaintance with her son-in-law, this year it will be 30 years old), on the 18th, the mother-in-law has a birthday, on the 19th everyone comes to us, on the 20th, at the in-law's birthday, on the 29th. th my mom's birthday.
And these are only planned activities.
It's called: January has come - goodbye to diet and liver.
dandelion
toffee
dandelion, what's that !!! In late May-early June, 2 weeks 7 days of birth. Moreover, 5 - from the closest relatives: a daughter, a mother-in-law (the first, I have two, although the husband is one ...), a father-in-law, and a husband and son on the same day. And the other two are with close friends.
Moreover, if the jubilee year, then the jubilee for everyone (only the daughter falls out).
That's where the horror is !!!
By the birthdays of her son and husband, the fuse is almost completely depleted ... I just don't have the strength to celebrate ...
I look forward to 2019 with horror. The husband will be 50, and the son - 25. And this in one day. I feel that one day will definitely not be enough !!!

And my grandson and I were lucky, although we were born on the same day, but already in July. My daughter gave it to me for my fortieth birthday. By our day, everyone is ready for the holiday.

I apologize to the moderators for the off ...
