Avian ventricle salad

Ingredients

boiled ventricles (of any bird) 300 grams
boiled egg 3 pieces
turnip onion 1 piece
medium carrots 1 piece
any greens option
salt taste
ground black pepper taste
mayonnaise for refueling
vegetable oil 1-2 tbsp. spoons

Cooking method

  • Wash the ventricles (approximately 600 grams), clean them of films and partitions.
  • Boil in slightly salted water with bay leaves and allspice.
  • Drain, cool and cut into strips.
  • Cut the onion into half rings.
  • Cut the carrots into small strips (I grated with a Berner grater)
  • Hard boil the eggs, cool, peel and cut into cubes
  • Lightly fry the onion until transparent.
  • Add carrots.
  • Fry over low heat until tender. Make sure that vegetables are not fried.
  • Refrigerate.
  • Mix all ingredients.
  • Season with salt, pepper, add chopped greens if desired.
  • Season with mayonnaise.

Note

Delicious hearty salad. If there is not enough pungency, then you can add pickled white onions or cucumbers. It is quite possible to put green peas or boiled beans. You get such a variant of Olivier. Recommend!
