Spicy beetroot soup with cranberries and ginger

Ingredients

beets (large) 3 pcs
ginger root 2 cm
cranberry juice 1 glass
brown sugar 1 tbsp. l
cayenne pepper taste
salt taste
water 2 glasses
lemon juice 1 tbsp. l.
refueling
yogurt 2 pcs
garlic 1 clove
cilantro bunch
coriander (chopped) pinch

Cooking method

  • Pre-prepare the yoghurt dressing.
  • To do this, pour yogurt into a blender, add chopped garlic and cilantro leaves, season with coriander, salt and pepper to taste, punch into a homogeneous mass.
  • Transfer the dressing to a bowl, cover with foil and refrigerate for 1 hour.
  • Peel the beets, cut into strips, put in a MV saucepan, sprinkle with lemon juice.
  • Let stand for a few minutes, then pour over cranberry juice mixed with 2 glasses of water; add grated ginger, cayenne pepper, salt and sugar.
  • Switch on the VEGETABLES program pressure 0.7, time 15 minutes.
  • After the end of the program, wait until the pressure has dropped and the lid is unlocked, then pour the soup into a blender and whip in a puree.
  • You can serve the soup hot or cold (tastier in my opinion) with yoghurt dressing and chopped green onions.
