Beetroot Donskoy on kvass

Ingredients

Beetroot with tops 1 PC.
Carrot 1 PC. small
Fresh cucumber 1 PC.
Green onions (plus greens if desired) 1 bundle
Boiled eggs 2 pcs.
Kvass by consumption
Salt, sugar, pepper taste

Cooking method

  • Peel the beets, cut into strips and add 1 glass of water. Add a few drops of vinegar and simmer, stirring occasionally, for 20-30 minutes. In 10-15 minutes. before the end of stewing, add washed and chopped beet tops - first the stems, then the leaves. Cook the carrots separately, cool and cut into strips. Also cut the cucumber into strips or grate on a coarse grater. Finely chop the green onions and herbs. Cut the eggs into large wedges.
  • Put everything in a saucepan and pour in kvass. Add sugar, salt, pepper, mix. Refrigerate. Serve with sour cream and herbs.

I already posted the recipe Donskoy cold beetroot, but this soup is somewhat different in composition and completely different in taste. I liked this one more.
