"Snack" carbonade 2 options: sweet and spicy (aerogrill)

Carbonade For a snack 2 options: sweet and spicy (airfryer)

Ingredients

Pork carbonade 1 kg
Salt (nitrite + table salt) 10 gr + 10 gr (2% by weight of meat)
Sugar 2 g (10% of the amount of salt)
Water 100 g (10% by weight of meat)
Garlic dry powder 1 tbsp. l.
Ground black pepper 1 tsp
Nutmeg 1 tsp
Granular sweet mustard 1 tbsp. l. for coating
Adjika Caucasian spicy 1 tsp for coating

Cooking method

  • Prepare the carbonade: peel, if necessary, wash and dry thoroughly with a kitchen towel.
  • Next, I cut a kilogram piece in half, thereby reducing the thickness of the piece by half for faster warming up when cooking.
  • Dissolve salt and sugar in water.
  • Scatter the meat with a salt and sugar solution using a meat pickle syringe. I added 40 grams of solution to each piece.
  • Add pepper, garlic and nutmeg to the remaining mixture.
  • Put the meat in a container or bag, pour out the marinade, close or tie the bag, trying to release all the air and leave to marinate in the refrigerator for 12-24 hours.
  • After the time has elapsed, warm up the meat to room temperature for 2-3 hours.
  • After removing the chop from the bag, coat one piece with mustard, the other with adjika.
  • Bake on a wire rack in an oven or airfryer, gradually increasing the temperature in the chamber from cold to 80–85 ° С for 3–5 hours until the internal temperature of meat is 73 ° С.
  • I baked in a Brand 35128 (heating element) airfryer, controlling the temperature:

  • 1st hour - 60 ° С speed 3 (high)
  • 2nd hour - 70 ° speed 3 (high)
  • 3rd hour - 80 ° С speed 3 (high)
  • 4th hour - 80 ° С speed 2 (average)
  • In 4 hours, both pieces of meat were cooked to 73 ° inside.
  • Then cool to room temperature and refrigerate to ripen for at least 8 hours.
  • "Sweet" carbonade
