Pineapple Mambo Cake

Ingredients

Biscuit
Margarine or butter 125 gram
Sugar 200 grams
Eggs 4 things.
Flour 300 grams
Baking powder 6-10 grams
Cream
can of canned pineapples 385g (580ml)
sour cream 20% 800 grams
gelatin 25 grams
lemon 1 PC.
powdered sugar 200 grams
Fruit for decoration, jelly

Cooking method

  • Biscuit:
  • Beat eggs with sugar, then add melted margarine or butter. Add baking powder and gradually introduce flour, stir well until a homogeneous mass is formed. Pour into a split form d / 25 cm, no less. Bake in the oven for 40-45 minutes at 180C.
  • Cream:
  • 2 tbsp. l. gelatin (25g) pour 5 tbsp. l pineapple juice from a can, let it stand for 10-15 minutes to swell, then melt over low heat, stirring constantly, until dissolved. The main thing is not to let the gelatin boil, let it cool a little to room temperature.
  • Pour sour cream into a deep bowl, add 2 tbsp. l. lemon juice and 200 g of powdered sugar, beat, then pour in the cooled gelatin in a thin stream and stir vigorously. All! Our cream is ready.
  • Assembly:
  • We take the cake out of the oven, let it cool, and then carefully cut off the top layer and carefully, so as not to damage the "bottom" of the cake, take out the middle. We get a "basket-base" for our cake.
  • The top layer of the crust and the middle, cut, break, crush, into small pieces, add pineapple pieces and 1/2 lemon pieces and mix gently. The filling is ready.
  • We begin to shape the cake, after putting the base back into the baking dish. Now we mix the cream and the filling and spread evenly on top of the crust - the base, slightly press down, align and put in the refrigerator for about 1 hour.
  • the cake freezes, we prepare the decoration:
  • Peel the kiwi, orange and banana from the peel, chop thinly (cut the orange in half and the kiwi). We prepare the jelly according to the recipe on the back of the package, while adding another 1 pack of gelatin, let it cool, but not freeze. When the cake hardens, put the bananas on one half of the cake and half the kiwi on the other. Cut the orange halves and form the roses. We make "leaves" from a green apple and put them next to the "roses" from orange and fill the whole cake with ready-made jelly.
