Ingredients

Cakes:
Wheat flour 225 g
Butter 350 g
Cocoa 50 g
Eggs 8 pcs.
Sugar 300 g
Vanilla sugar 1 tbsp. l.
Salt pinch
Chopped almonds 50 g
Baking powder 2 tsp
Potato starch 125 g
Interlayer:
Jam apricot 200-250 g
Rum 2 tbsp. l.
For decor:
Chocolate glaze

Cooking method

  • Cakes:
  • Beat butter well, add flour mixed with starch, cocoa and baking powder to it. Then add yolks whipped with sugar and vanilla sugar into the dough, add almonds and, last of all, stir in the whites, whipped with salt. Bake in a mold preheated to 180about oven until "dry stick". I made the cake from three cascades, so I used three forms of different diameters (22, 16 and 12 cm), filling them to the middle.

  • The finished cakes are cut in half and greased with jam, to which rum is added. The cake is also coated with it outside. In the original recipe, the cake is then coated with a chocolate icing. But I, since it bears the name "Saxon", wanted to give it the appearance of a kind of Gothic knight's castle. Therefore, I melted 150 g of dark and 80 g of white chocolate and made the following decoration from it:
