Shortbread cookies with plum jam

Ingredients

For the test
sugar 130 gr.
egg 1 PC.
flour 300-350 gr.
salt 1/4 tsp
baking powder 1/2 tsp
margarine (butter) 200 gr.
vanillin on the tip of a knife
For filling
plum jam (any other) about 5 tbsp. l.
For gluing cookies
yolk 1 PC.

Cooking method

  • We put all the products except flour into the bowl of the food processor, knead for 2-3 minutes, then add flour and quickly knead the dough with our hands. We send it to the refrigerator for 30 minutes.
  • Roll out the finished dough on a table dusted with flour to a thickness of about 5 mm, cut out identical circles with a mold. In half of them, with a different mold, with a smaller diameter, we cut out circles in the middle so that we get rings.
  • Beat the yolk with a fork, grease the circles without holes in the middle with yolk, place the rings on top, put the cookies on a baking sheet, fill the rings with thick jam so that the filling is not above the edges.
  • We bake cookies in a preheated oven at 170C for about 10-15 minutes.
