Braid with cheese and bacon

Ingredients

dry yeast 3 g
wheat flour c. from. 300 g
milk 100 g
water 80 g
salt 4 g
sugar 20 g
butter 25 g
vegetable oil 25 g
raw smoked bacon
hard cheese

Cooking method

  • Mix yeast with flour (leave 1 tablespoon flour). Add salt, sugar, warm milk and water. Knead for 8-10 minutes.
  • Add softened butter, vegetable oil, and remaining flour. Knead a smooth, soft, non-sticky dough.
  • Leave to ferment at room temperature for an hour and a half. In the middle of fermentation, knead the dough once.
  • Braid with cheese and bacon
  • Dust the table with flour. Put out the dough, knead, roll out into a layer 5 mm thick.
  • Put pieces of bacon and grated cheese (I have a lamber, about 50-60g).
  • Roll up on the long side. Lay with seam down.
  • Using a sharp knife, cut the roll into two parts, not reaching from one side to the end of the roll about 2 cm.
  • Unfold both parts of the roll with the slices up and intertwine.
  • Put in a mold (I have 12x23 cm), covered with baking paper.
  • Cover loosely with plastic wrap. Proofing - 60 minutes.
  • Bake in an oven preheated to 230C (convection 210C) degrees with steam for the first 8 minutes, then lower the temperature to 190C (convection 170C) degrees and bake until tender. The total baking time for me was 45 minutes.
  • Leave the finished braid in the mold for 5-7 minutes, then remove and cool completely on the wire rack.
