Ingredients

For meringue
egg whites 9 pcs.
granulated sugar 3 tbsp.
For cream
granulated sugar 1 tbsp.
egg yolks 6 pcs.
milk 1/2 tbsp.
butter 350 BC
For the layer
steamed prunes 3 tbsp.
walnuts 1.5 tbsp.
For decoration
bitter chocolate 1/2 plithia

Cooking method

  • First, bake the meringue.
  • Serving 1: Beat 3 proteins with a mixer until foamy, Gradually add 1 cup of granulated sugar in portions, continue to beat (so that no dripping from an inverted spoon). Put out of this portion on a baking sheet (covered with baking paper, I like the Teflon mat better - generally a dream !. On the back side you can draw a circle that you need to get and fill it in) round cake (I squeeze out of a pastry bag), 1-1 thick , 5 cm. Squeeze out small bezels from the remaining mass in free space.
  • Serves 2 and 3: Same.
  • I bake 3 cakes and a small bunch of small beeshekas.
  • Cream: 1 tbsp. sugar + 6 yolks + 1/2 tbsp. milk, stir well, bring to a boil (stirring constantly). I do this in a milk cooker. It turns out great, like condensed milk. Cool, pre-covered with cling film. It is not easy to cover with foil. but press it to the entire surface of the mass. so a crust does not form) and in small portions add this cooled mass to soft butter (350g), whisking constantly.
  • Interlayer: 3 tbsp. steamed prunes (it is better not to cut, but to tear with your hands, so it turns out softer), tear into small pieces, 1.5 tbsp. finely chop the walnuts with a knife.
  • Layers: 1- meringue-cake
  • 2 - cream
  • 3 - prunes, nuts
  • So repeat 3 times accordingly.
  • Put small bezeshki on the top cake, smearing the bottom with cream. Smear a little the sides with the remains of the cream. Drizzle with melted chocolate from a pastry bag.
  • Let stand overnight (soak), then refrigerate.

How I bake meringues.
Turn on the oven for 5 minutes. Oven with a slightly open oven over low heat (100 C). You can keep it for a long time. I keep it for 1.5-2 hours, then turn off the oven, but I do not take out the meringue until the oven has completely cooled down (most often I bake the meringue overnight and leave it in the oven until morning and it turns out white and crunchy).
I spread the meringue cake on the paper in a spiral, just like in the photo (only I don't have a photo of the meringue before baking, this is a photo of a prepared dough for another "Lazy Woman" cake. I just want to show how I spread it).
