Cooking method

  • I found the recipe for buns in a textbook for pastry chefs, according to the Bulgarian GOST, published in 1976. There are, of course, ingredients for the workshop, but I reduced it. The buns are soft and tender.
  • Ingredients - original proportions:
  • flour -6.950
  • sugar - 1.260
  • oil - 1.060
  • eggs - 39
  • salt - 0.030
  • yeast - 0.230
  • vanilla essence 0.006
  • milk - 2.000 liters
  • Of course, it is recommended to knead in a dough method, but I do it in the kitchen machine without dough. Kneading process:

  • I made a dough for 2 eggs. Divided into 9 pieces, formed balls.

  • Roll out a tourniquet from each ball and roll it like a snail. I twist the ends of the rope in the opposite direction so that the sticky threads are better expressed, they are clearly visible in the photo of the broken bun.

  • We transfer our buns to a baking sheet and put in a warm place for half an hour. After they come up, brush with yolk or milk and sprinkle with poppy seeds.

  • Bake at 180 grams, I like to put in a cold oven, so they increase in size even more. But if they are on the verge of you, look, lest they ferment and settle.
