Sweet buns with oatmeal

Ingredients

Dough:
Water 200g.
Wheat flour 100g.
Fresh yeast 12g.
Sugar 2h l.
Dough:
Opara
Oat flakes “Hercules. Traditional " 150g.
Milk 300g.
Wheat flour 500g.
Softened butter 50g.
Vegetable oil 20g.
Sour cream 50g.
Cognac 15g.
Sugar 120g.
Salt 1 \ 2h. l.
Vanillin 1 \ 4h. l.
Raisins 200g.
Milk for lubrication
Sugar for sprinkling

Cooking method

  • Pour milk over the flakes and leave for 30 minutes.
  • Prepare dough. Heat the water to 37C. Grind yeast with sugar, add to water. Flour on top. Beat until smooth. Leave on for 30 minutes.
  • Knead all ingredients except raisins.
  • Knead for 2 minutes at 1 speed
  • 12 minutes at 2 speeds
  • The dough is soft, sticky. Leave the dough in a bowl after kneading for 10 minutes.
  • Then put on the table, greased with vegetable oil. If necessary, also lubricate hands with oil.
  • Form a ball out of the dough, place in a greased container, cover and leave for 30 minutes.
  • Then fold the dough 4 times, return to the container, cover and leave in a warm place for 1 hour.
  • After a while, knead the dough, form a ball, cover and leave for 10 minutes.
  • Next, roll out the dough into a rectangle, lay out the washed and dried raisins, roll up, cut into 20 pieces. Form a bun out of each. Place on a baking sheet lined with paper, cover and leave in a warm place for 40 minutes.

I gave them a different shape, and smeared them with yolk before baking. Only half of them were made with raisins. The crumb photo session includes baked goods without raisins. I used long-boiled whole-grain oatmeal. I decided not to sprinkle it with sugar, and it's so good and sweet enough.
