Chinese spicy shrimp

Ingredients

Shrimp (preferably fresh frozen) medium 16 - 18 pcs.
Medium onion 1 PC.
Garlic 5-6 teeth
Freshly ground black pepper 1 tsp
Chile 0.5 pcs or 0.3 tsp. powder
Sugar 1 tbsp. l.
Soy sauce 8-10 st. l.
Water 8-10 st. l.
Lime or lemon 2 slices (plus for serving)
Refined vegetable oil (light sesame) 1-2 tbsp. l.
Ginger (juice) 1h l.

Cooking method

  • Once in Saigon I had a chance to try shrimp in something like this. They seemed extremely sharp. I wrote down the recipe, as I could understand and see.
  • Chinese spicy shrimp
  • Preparation
  • - We take medium-sized shrimps, defrost naturally. Better, of course, to use fresh frozen (gray) shrimp. Then we separate the head from each.
  • - Mix the soy sauce sauce, water, sugar, black pepper in a bowl. Fresh ginger juice can be added at will, literally 1 hour. l. If you did not use chili peppers in frying, then add ground chili (or without it).
  • - Warm up in a wok 1-2 tbsp. l. vegetable refined oil, better than light sesame. Fry finely chopped onions with chopped garlic and chopped chili until golden brown. Constantly interfere! Do not overcook!
  • Chinese spicy shrimp
  • - Pour the mixture with soy sauce into the wok to the onion, let it boil and immediately throw the shrimp into it. Pour with lime or lemon juice.
  • Cook for 3-4 minutes, stirring constantly.

  • - Leave to cool in the sauce and serve as a snack for beer. Can be eaten warm with noodles or unsalted rice. But then the shrimp should be allowed to brew a little in the sauce under the lid.
  • Next time I will try to cut the shell along the spine with scissors and remove the esophagus if the shrimp are very large.
  • I recommend putting a bowl of lemon water on the table next to the shrimp and putting a warm linen napkin for wiping your hands.

Note

If you don't want it to be very spicy, then reduce the black pepper by half and skip the chili (or pinch). For extreme lovers, put chili with seeds. But cooking in a shell still neutralizes the excessive spiciness.
Sometimes I fry the ginger (slices) and garlic (crushed cubes) together until golden brown, remove, and then fry the onion.
