Ingredients

For the test
honey 2 tbsp. l.
cognac 3 tbsp. l.
egg 3 pcs.
soda 2 tsp
vinegar 9% for soda quenching
butter 60 gr.
wheat flour, higher. grade 450-500 gr.
sugar 270 g
For cream
sour cream (any fat content) 800 g
sugar 300 g
For glaze
cocoa 3 tsp
sugar 4 tbsp. l.
butter 1 tbsp. l.
sour cream 3 tbsp. l.

Cooking method

  • Before cooking, take a larger pan, pour water into it and put it on the fire, that is, prepare a water bath.
  • Put butter, honey, sugar and cognac in another saucepan and send it to a water bath, for 15-20 minutes - until the sugar dissolves, do not forget to stir.
  • Meanwhile, beat until the eggs are 2 times larger. As soon as the sugar has dissolved, quench the soda and pour it into the honey mass, mix quickly, then gradually add 400 gr. flour and egg mixture alternately in small portions, stirring vigorously, until we add everything.
  • Remove the dough from the water bath, let it cool to a state where you can touch the dough with your hands without scalding. We estimate the density of the dough - if it is not thick enough for rolling, gradually add the rest of the flour until thick.
  • Divide the dough into 8 parts and roll out into thin cakes, sprinkling the surface with flour. The cakes are very thin, about 35 cm in diameter.
  • Bake on a greased sheet of baking paper, each crust for 3-4 minutes, until golden brown. We take it out of the oven along with the paper, turn it over onto a plate, remove the paper and put a new cake on it, and so on all 8 biscuits.
  • While baking the cakes, you can do the cream. We mix sour cream with sugar and cook after boiling, not forgetting to stir, for 20-25 minutes (until thick). Caution! At the end of cooking, the mass begins to "spit".
  • Cook sour cream glaze with sugar, cocoa and butter. From boiling - 5 minutes.
  • Let the frosting, cream and cakes cool down and begin to collect the cake, after cutting off the cakes evenly, attaching a plate of the size we need to them (well, you can not cut it at all). Each cake takes about 3 tablespoons of cream.
  • Odessa honey cake
  • Do not grease the top cake, cover it with glaze, after sprinkling the edges of the cake with crumbs from the cut cake layers. Decorate the top as you wish.
  • The cake is soaked very quickly, we start cutting it 2 hours after assembly.

I don’t know where the name came from, as a teenager I copied it from some culinary newspaper into a notebook, so it stuck. The cake conquered not only with its honey, but also with a caramel note, with a slight sourness, soft and melting in the mouth within a few hours after preparation. I will be glad if I become one of the favorites not only of our family.
