Ingredients

Pork shank 980 g
Barbecue sauce 1 tbsp. l.
Adjika 1 tsp
Powdered dry garlic 1 tsp
Chaman (hammer fenugreek) 1 tsp
Caraway 1/2 tsp
Salt 1 tbsp. l.

Cooking method

  • I make barbecue sauce myself

    I fry a finely chopped onion in olive oil, add a few chopped garlic cloves to it, pour in 4-5 peeled and mashed tomatoes, 1 (or to taste) tbsp. l. brown sugar, 1 tbsp. l. mustard, 3 tbsp. l. tomato paste and apple cider vinegar, 1 tbsp. l. Worcestershire sauce, salt, pepper to taste - cook with stirring until tender.

    but any ketchup can be used if desired. I also use "tasty" salt very often, it comes in different compositions, today I used this one:

With my love for cartilages, I would even cook less, but after reading from Lazerson that at the same temperature he did not have enough 14 hours for a pork hoof, and then he cooked it for another 40 minutes while boiling, I was reinsured.

I tried the knuckle, and I will tell you that I will never order it in a Chinese restaurant anymore, because the one that I got is just "deliciously delicious" !!! Soft, juicy, and delicious sauce, excellent gravy. I will write how I did it, maybe someone will cook, understand what I am writing about, so:
I washed the shank, scraped it with a knife, dried it, made cuts around (three), then smeared the whole shank with soy sauce (I have it soy in consistency like molasses, viscous, and there is already red pepper and garlic in it), then sprinkled the shank with fine salt and dry garlic, put it in a zip bag, cut the onion (a little) into half rings and put it on the shank on both sides and poured a little soy sauce on top of the shank.
I closed the zip bag, pumped out the air with the built-in vacuum device in the Caso sv 1000 (a little liquid came out into the container), and the shank visually turned out like a little in soy sauce (not much). And then 12 hours at 85 ° C.
Who likes this taste (in soy) it should be cooked.
