Ingredients

Pork loin with bone 1 kg
tangerines 4 things
garlic 2 teeth
carrot 16pcs
small potatoes 600gr
sugar 300gr
coriander seeds 1h l.
olive oil 3st. l.
salt and pepper to taste

Cooking method

  • We prepare the loin. I took a slice with 2 ribs for 2 servings.

  • Chop the garlic finely and put in a cup, where the meat will be marinated (you can immediately in a baking dish). Rub the loin with salt, pepper, sprinkle with coriander, add oil and juice of 1 tangerine.

  • Marinate the meat for about 1 hour, turning it twice.
  • I marinated the meat in a cup, so after an hour, in a baking dish lined with foil, I transferred the meat along with the marinade.
  • Preheat the oven to 210C. Place the meat in the oven for about 50 minutes, regularly pouring the marinade over it.
  • While the meat is being cooked, let's make the syrup. In a saucepan, melt 300g of sugar with 50ml of water.

  • We clean the 3 remaining tangerines and toss them into the boiling syrup. Let it simmer for about 5 minutes.

  • Get the tangerines out of the syrup.
  • Peel carrots and potatoes. Cut potatoes into slices, carrots into long strips. We don't really like boiled / baked carrots, so I added carrots not as indicated in the recipe (16 pieces), but just for beauty. Soak the carrots and potatoes in salted water for about 10 minutes, then drain.
  • After that, we spread them around the meat, leave in the oven for another 15 minutes.

  • After that, put the tangerines there and cook for another 10 minutes or until the potatoes are ready.

  • To bake the potatoes, I covered them with foil.
