Ingredients

Sour cream 20-30% 100 g
Powdered sugar 30 g
Gelatin 8 g
Cognac 15 g
Cranberry (or other berry) 30 g
Sugar 10 g

Cooking method

  • Prepare the forms.
  • Wipe the beak with sugar with a black sieve and boil for 1-2 minutes.
  • Soak gelatin. Put the swollen gelatin in a water bath and heat until the gelatin is completely dissolved.
  • Instead of gelatin, you can take agar-agar. It is several times stronger than gelatin and, unlike it, is not afraid of boiling. Their ratio is as follows: 1 gram of agar-agar = 2.5 grams of gelatin. The difference is visible and tangible.
  • Beat sour cream with sugar until sugar is completely dissolved. Without stopping whipping, pour in cognac, then cranberries and at the end in a thin stream, under the whisk and whisking continuously, pour in gelatin melted in a water bath. If you flop right away or hesitate to whip it, then it will freeze like a lump and the soufflé will not work. Gelatin can be added to boiled cranberries and kept in a water bath until the gelatin dissolves.
  • Having broken through the mass FAST, put it in the shapes and put it in the refrigerator for 1-4 hours.
  • If you delay with the layout, then it will begin to solidify right in the bowl in which it was whipped.
  • If you want the berry flavor to be more pronounced, increase the number of berries. The sweetness is regulated by icing sugar. When you increase the amount of ingredients, do not forget to increase the amount of gelatin.
